It’s filling, healthy and it’s usually really easy to pull together any day of the week. This Smoked Sausage, Spinach & White Bean soup is filled with staple ingredients that I almost always have in my pantry and fridge. Beans and basic veggies like carrots, celery & onions are really essential ingredients to just about all of our soups so I try to keep them on hand.
    Ingredients:
    14 oz. smoked sausage
    8 cups vegetable broth
    3 cloves of garlic, minced
    ½ medium onion, diced
    4 tbsp olive oil, divided
    1 can cannellini beans, undrained
    2 cups rotini pasta
    2 cups spinach, roughly chopped
    ¼ tsp salt
    ½ tsp pepper
    1 tsp oregano
    1 tsp thyme
    Directions:
    In a skillet, heat 2 tbsp olive oil over medium heat. Chop smoked sausage into ½-1 inch slices. Cook over medium heat, 6-7 minutes, stirring frequently, until cooked through and beginning to crisp on all sides. Set aside. In a large soup pot, heat remaining 2 tbsp olive oil over medium heat. Add chopped onions and minced garlic and cook for 2-3 minutes, until onion is turning translucent. Pour in vegetable broth, and add cannellini beans. Bring to a boil. Add in pasta, sausage, and seasonings. Boil for 5-7 minutes, until pasta is just al dente. Add spinach and cook 1-2 minutes more. Serve hot.
