Banana Cream Pie Cupcakes Recipe

The other day was my hubbies 35th birthday, and I had been promising to pull out my old Banana Cream Pie Cupcakes recipe, so I thought what better time than his b-day! Today I’m going to share this delicious and rich dessert with you!
Banana Cream Pie Cupcakes A delicious cupcake that takes just like your eating a banana cream pie!
1 Box Yellow Cake Mix ( I use Immaculate because its the closest to homemade) + ing on the back
1 Box Vanilla Pudding Mix
1 Box Nilla Waffers
1 Box Instant Banana Pudding Mix
1 1/2 c Cold Milk
1 Banana
Frosting
1 c Soft Butter
1 c Vegetable Shortening
2 lbs Confectioners Sugar
8 oz Whipped Cream
3 tbs Heavy Cream
2 tsp Vanilla Extract
2 tsp Banana Extract
Preheat oven to 350*. Line 2 muffin tins with 24 paper liners and spray with baking spray.
In large bowl prepare the cake mix according to the instructions. Stir in the box of vanilla pudding mix without the milk..mix until blended.
Place a single cookie in the bottom of each paper liner then pour batter into each filling each 2/3 full and bake for 20-25 min depending on your oven (check with toothpick at 18min)
Cool completely
Once cupcakes have cooled completely, core them using a sharp knife as to not mangle the cupcake. Be careful as to not cut completely through the bottom of the cupcake, the cookie should help with this.
Prepare your filling. In a medium bowl combine milk, banana cream pudding & sliced banana and stir to combine..you want your banana sliced then quartered so they are small bits. fill the cupcakes with the pudding.
Make your frosting. mix together butter, shortening, whipped cream, heavy cream, vanilla, & banana until blended. Next add in your confectioners sugar, and mix until smooth. Place in piping bag and pip generously over the top of the cupcake and pudding filling.
Keep refrigerated if not eating that day.
You can make this without the pudding filling and it still tastes like a banana cream pie, but its not as messy and easier for children to handle.

Strange Magic DVD Review

Strange Magic, magical movie that stole hearts in January is now out on DVD!
“Strange Magic,” a new animated film from Lucasfilm Ltd., is a madcap fairy tale musical inspired by “A Midsummer Night’s Dream.” Popular songs from the past six decades help tell the tale of a colorful cast of goblins, elves, fairies and imps, and their hilarious misadventures sparked by the battle over a powerful potion. Lucasfilm Animation Singapore and Industrial Light & Magic bring to life the fanciful forest turned upside down with world-class animation and visual effects.
I wasn’t able to go see it in theaters so was excited to put in the dvd and check what all the buzz was about.
A long the lines of Gnomeo and Juliet, it takes a whole different magical world and puts the story to a classic Shakespeare story with lots of music. Lots of fun, and interesting characters fill the story. Graphics and animation are great.
Set in the fairy world that borders the dark forest, it’s the ultimate battle between light and dark & love and hate.
While I enjoyed the movie, the boys seemed to be a bit bored by it…except for the action parts. They started sitting still and actually watching about half way through when they captured the fairy princess and started the adventure to get her back…like I said, more of the action.
