The holidays for me brings on baking…It’s a fun thing that my mom and me do together every year, and every year I like to try something new! Brownie Brittle has been enjoyed by our family for a few months as we had found it in World Market and thought we would give it a try. Brownie Brittle sent me their NEW 1oz Single Serve Bags which features Paddington – hitting theaters January 16th – in Chocolate Chip & Salted Caramel, which started my inspiration for the “English” toffee I’m about to share with you.
They also sent me the Toffee Crunch which is a great side snack to the Salted Caramel Brownie Brittle English Toffee.
If you have kids, chances are you’ve heard of Paddington, but just in case you haven’t check out this fun and adorable trailer for the upcoming film…
Now the recipe you’ve been waiting for!
INGREDIENTS
Toffee
1 cup butter 1 cup sugar 2 tablespoons water 1/8 teaspoon salt 1 teaspoon pure vanilla extract
8 ounces chocolate bark
Topping
1/4 cup pecans, finely chopped 1/4 cup Brownie Brittle, finely chopped 1/2 tsp Corse Sea Salt
Caramel Drizzle
INSTRUCTIONS
Preheat oven to 350F. Toast the chopped pecans on a baking sheet in the oven for 6 to 8 minutes, or until fragrant.
With heavy-duty aluminum foil, form a 10-inch square shell with 1-inch high sides. Place the foil shell on a baking sheet, and set aside.
In a heavy saucepan, cook the butter, sugar, water, and salt over medium heat until the temperature reaches 305F (hard-crack stage), stirring occasionally (watch closely after it reaches 290F because the temperature will increase rapidly). When the mixture becomes dark golden brown, immediately remove the pan from the heat. Stir in the vanilla extract. Pour the mixture into the foil shell. It will spread but may not reach the edges of the square. Skore toffee with back of knife to help the chocolate stick. Cool at room temperature for 45 minutes, or until hard. Wipe off any access liquid that may have puddled on the top.
Melt the chocolate according to instructions on the side of package. Spread melted chocolate over the cooled toffee, and sprinkle with the pecans, & Brownie Brittle pressing lightly to set into chocolate. Drizzle with caramel & sprinkle corse sea salt. Let set at room temperature 1 hour, or until the chocolate is set. Break toffee into pieces. Store covered at room temperature for up to 1 month.

Don’t make plans on Friday unless it’s to watch the new Phineas and Ferb: Across the 2nd Dimension” Disney Channel Original Movie. The movie starts August 5th at 8:00 p.m eastern time. My boys are looking forward to a movie from there #1 summer animated series!
For those of you who don’t know Phineas and Ferb is the animated series that follows two stepbrothers, as they happily set out to conquer boredom and make everyday of their 104-day summer vacation count. They are accompanied by Perry the Platypus ( who unknown to all has a double life as a suave secret Agent P), deftly battling the evil Dr. Doofenshmirtz to save the world. Meanwhile, older sister Candace is aghast at her brothers’ bold antics and makes it her life’s work to tattle on the to Mom and Dad, though somehow she can never seem to catch the boys red-handed.
In the Disney Channel Original Movie, Phineas and Ferb go on their biggest journey yet, into another dimension! When the boys finally discover Perry is in fact a secret agent who battles the forces of evil daily, they join him on a grand adventure that blasts the to another dimension where Dr. Doofenshmirtz has taken over an alternate Tri-state Area. When they uncover his ploy to travel back to their dimension to take over their Tri-state Area, the gang, as well as their alter-egos, must band together to stop him.
On Monday, July 11, in New York City, Disney launched “Perry the Platy-bus on tour,” featuring a 27′ long, customized, rounded aluminum Airstream trailer outfitted stern-to-stern as Phineas and Ferb’s teal-colored pet platypus. The bus is on a coast to coast journey from New York City to San Diego’s Comic-Con International (July 21-24) and the Disney D23 Expo in Anaheim (August 19-21). During the tour, fans are invited to marvel at nearly 4,000 pounds of Perry, come aboard, play the exciting new Unity 3D video game, “The Movie Game: The Dimension of Doooom!” and video console games, sing Perry-oke and more. As LeapFrog continues the pursuit of making reading an activity that every child and family can enjoy, they are hosting the 20/20 Reading Challenge in honor of National Reading Month this March. LeapFrog is hosting a campaign to encourage families to take a pledge to read for at least 20 minutes per day with their kids. As I’m sure you are aware, an early introduction to reading is an important part of a child’s development.
In fact, kids who are read to at home have a substantial academic advantage. These advantages last throughout a child’s academic career. Studies have shown that:
Twenty-six percent of children who were read to three or four times in the last week by a family member recognized all letters of the alphabet. This is compared to 14 percent of children who were read to less frequently.
According to NCES, only 53 percent of children ages three to five were read to daily by a family member. Children in families with incomes below the poverty line are less likely to be read to aloud every day than are children in families with incomes at or above poverty.
The NCES also reported that children who were read to frequently are also more likely to:
Count to 20 or higher than those who were not (60% vs. 44%)
Write their own names (54% vs. 40%)
Read or pretend to read (77% vs. 57%)
As a part of the March 20/20 Reading Challenge, LeapFrog will be partnering with a great non-profit, Kristi Yamaguchi’s Always Dream Foundation, to donate 20 books to the foundation’s under-served classrooms for every pledge they receive.
